Irish chef Damien Brassel has been a student of the culinary arts from a very young age. He went on to pursue his passion through formal training at universities in Ireland and Switzerland. By 20 he was the head chef at Peacock Alley, a Michelin star restaurant in Dublin. Damien continued his studies by working alongside world-renowned chefs in Europe, Australia and the United States. He experimented with his own cuisine, inspired by Heston Blumenthal, Marc Veyrat and Pierre Gagnaire, while at Ferme de Montagne in France.
Knife + Fork is Damien Brassel’s New York solo debut. A showcase for modern European cooking and intense, vibrant flavors, Knife + Fork is a rustic, intimate space on East 4th Street, where the food is the star. Damien has collaborated with Michelin star wine sommelier, Fredric Grappe, to compliment his exceptional menu with a diverse, exciting and affordable wine list.
