In May 2006, Knife + Fork opened as the first solo venture for chef/owner Damien Brassel. Damien constantly endeavors to make healthy food simple, approachable and understandable to everyone, but most of all taste good. He believes that the suitability and freshness of the ingredients used is as important as the skill of the cook, a “salmon without a cook is better than a cook without a salmon”. Great cooking is not just the expression of a person’s genius imposed on a given product but inventive cooking is an art that requires a complete knowledge of traditional methods. He spends a great deal of time seeking out ingredients finding the perfect blend of flavors. This combined with his use of various methods of cooking including poaching, slow cooking and smoking of meats has developed into this interesting yet approachable menu.
